I'm really interested in the idea of how architecture creates mystery for the player. It would seem to me that game design and speculative world-building is one of the only areas where that mystery is intentional and thus a skill-set and framework of architectural practice that only exists in fiction (perhaps some examples can be pulled from structural mediums and sculpture in the fine art world). It seems to be a very strong aspect of why many post-apocalyptic and fantasy worlds are so fun to explore as we seek to resolve the interruptions you've noted and in the process expand our understanding of the world. I suppose the only IRL analogy may be archeology (Stonehenge as an example) in which the initial intention of the architecture is not easily known and thus it commands our curiosity.
Since you love the Guardian Garage of the Lomei Labyrinth so much, I have to recommend The Last Guardian to you! As an architecture geek myself, it contains some of the most fascinating buildings and spaces I've ever experienced. When I was playing through those mazes in BOTW I thought of TLG in the back of my head 😀
