You can absolutely parry multiple beams at once. I did it multiple times in the trial of the sword. Maybe that's the only place it works, because they activate at exactly the same time?

Biggest thing I've noticed with this game as a brand new player to the franchise, is that you need to spend hours grinding resources like fruits and arrows BEFORE you can do literally anything else in this game or you will end up getting killed a lot.
