As a fan of the series since Red and Blue, Sadly the only thing to do once you beat it is to shelf it. Hope Gamefreak find some inspiration form somewhere because other than the Great Crater the game was lifeless and lackluster.

What to do when you finish scarlet/ violet, sell it for Pokémon legends Arceus or emerald version and now you're playing a much better game.
Shiny pokemon are so annoying. I hate the extra sparkle time in every single battle. That time adds up if you battle a lot of wild Pokemon or trainers.
Cool…. I've already done all of these things and still don't have anything to do … 😔
Breeding is pointless now that you can change ivs and natures

Most people don't know it, but you can rematch 4 of the 8 gym challenges.
With 3 of them that you can rematch any time (infinite times) and 1 of them that you can rematch only once.
The rematches will be different from when you played them the first and will give some rewards.
But what do I do with all those strong Pokemon that I catch? Only battle random people? I miss the battle tower ngl
