I did a true 100% in 1999/2000 using a manual on N64 no hacks, cheats or mods. and I took pride in a 0 deaths. I basically carried only fairies in my bottles unelss I needed bugs, blue flames or other quest items. I've been chasing this ever sense. I didn't even buy any bombchus. I only earned them thru bombchu bowling, skulltulas, and other side quests.
And that's why a 100% run is in the eye of the beholder, it can mean different things and what is done on speedruns is a convention, not a fact. (Unless the game itself has a percentage value on its file select, then again those that have, usually go above 100% anyways lol)

Destroy all boulders that do not respawn. For example, in Goron City, there is a maze of boulders in one room as adult link. Also the boulders that are block the shortcut from Goron City to Lost Woods

I agree with him (mostly). In my opinion skipping the big goron knife and going for the big goron sword is still 100%. They are literally the same sword. The only difference between the two is one breaks and the other doesn’t. Just my opinion…
Now do it in master quest without dying once
The largest fish I've ever caught was a 22 pounder as adult. It was the only big fish in the pond as an adult so I think it's kind of random. You just need a 13 pounder for the golden scale. This was on 3DS btw
I wasn't able to get the 40 deku nuts upgrade due to a bug that locks you out of it once you get the poacher's saw. Tbh I might just edit my save to fix it because that's Nintendo's fault and I don't know of any other way to resolve the issue
Talk to every character with every mask/no mask and as adult link. I've done everything other than die 999 times.
No tunic fire temple/water temple. Damage is taken in 16ths of a heart, if you only have 1/16th of a heart left (achieved with fire tick damage) you can prevent heat and breathing timers from ever appearing.
Search for "OOT: 100% All Viewable Permanent Flags". There's a pastebin there with all the flags you can set in the game. That also should include the race with the Running Man. Even though you never win and get nothing for it, your best time is registered in the board on Link's House.
Sometimes, minimum is better than maximum. I consider having 0 deaths better than 999 deaths on a save file, but that's up to you.
Another thing you can try is getting a 46sec run in the Lon Lon Ranch obstacle course. AFAIK that's world record and it doesn't seem to be possible to legitimately get a lower time than that. It is hard, but feasible. It's probably easier than the 2000 points in Gerudo Fortress.
I have never, ever found a bigger fish than 20 pounds. There's a lot of people in the internet saying they get a bigger fish, even pics, but those could have been fake. I found online that a bigger fish might appear at the pond after you get the 20 pounds, but that never happened to me. With Young Link, my biggest fish is 11 pounds.

You forgot to buy all the Bombchus at the Bombchu shop in Hyrule Market. It will replace them with sold out signs, so that's another permanent thing.

IMHO a true 100% should included talking with all gossip stones with the mask of truth, and get all those unique dialogues from different characters, while wearing the various masks we can get… but again that's a very, very personal opinion 😉

Doing all this, gets you a few years older, just imagine having the same "100%" thing for other games, you'll become grandpa at 20. This games drain you of life. Addictive and not healthy.
