I've done the No Pooping challenge although it wasn't intentional I just decided not to collect any of the Korok Seeds and it's definitely possible to do you just have to be really picky about which weapons bows and shields you pick up and possibly not get a really good weapon you want

I once did an all liquid diet run. To make a bit more challenging, I also banned any armor with extra effects. I was able to cook fairies, as the tonic is a liquid, but I couldn't hold on to them for a revive. I used a lot of milk, elixirs, and fairies in that run. Elixirs and milk mixed with food is allowed, so long as the result says "Drink" when you use it.
How about only fighting with the sheikah slate
Number 13 makes it impossible to get Urbosa's Fury, since you cannot buy the gerudo set.

As far as challenges go, my favorite would have to be the "no pause" challenge, on the Switch version of the game you can simply disable the plus, minus, d-pad left, right, and up buttons in the Switch's menu, no hacks or glitches required, and if you're wondering how that's even a challenge, there's a nice video on it by GameChamp~ :9
If you have access to your save data on either a hacked Wii U, Switch, or Cemu/Yuzu emulator, then I also enjoy save editing my game so I'm off the great plateau early, just change IsGet_PlayerStole2 to checked (removes fog barrier around the great plateau, but also unfortunately gives you the ability to use the paraglider, they're literally the same value checkbox, so it's impossible to skip the paraglider…), change Link's coordinates to wherever you want (I like to place him in Link's House in Hateno Village at Link's bed coordinates 3308.00, 238.87, 2291.65) and simply never going back on the great plateau, which means no shiekah slate, no runes, no towers, no access to shrines, no bloodmoons (unless you want working time), you're not the hero, you're just a normal Hylian challenge~ just make sure not to talk to Impa, as that quest progression is bugged without first getting the "Find Impa" questline from the old man on the great plateau after obtaining the paraglider (you technically don't have the paraglider key item yet, you're just have the ability to use it), and other than that and time being frozen, the game is perfectly playable~ This is also doable without save editing, as you just have to take advantage of the wrong warp glitch to get off the great plateau without ever obtaining anything other than the paraglider and 4 spirit orbs, but I prefer the save editing option because I don't even have to get 4 spirit orbs this way. :V
(Note: If you want working time, just simply raise the tower on the great plateau (allows time to progress beyond 11:00am), and trigger the first cutscene where Link runs up to the cliff edge and takes in the view (allows time to progress beyond 5:15am), to do the latter without picking up the shiekah slate, walk up as close as you can to the barrier without picking it up, save facing away from it, load your game and do a backflip, face toward while keeping your camera facing away from it, save your game, then load your game and you should be able to run up to the spot where you can trigger the cutscene without picking up the slate, alternatively, you can just edit your save data so you're either close enough to trigger the cutscene, or just change the value itself. :V)
If you know how to hex edit, you can change the heart and stamina values as well, 3 hearts is a value of 12, but you can change it to 1 ("01") for 1/4 of a heart for a no damage run, and 1 wheel of stamina is a value of 1000, and changing it to 1 (hex value of "3F 80 00 00" for some reason, any lower and it thinks you have infinite stamina…) makes it 1/1000th of a wheel of stamina, meaning you get tired extremely easily, no running, no climbing (can still climb ladders), no paragliding, no swimming, no charge attacks, no mounting Lynels, no taming wild horses (can still tame gentle horses), etc… of course, you can still always just eat yellow stamina food made by cooking endura carrots simply making stamina (or hearts for that matter) a limited resource you have to farm up. Alternatively, you can just change it to 1 heart ("04") and 1/5th of a wheel of stamina ("43 48 00 00") to further immerse yourself in that "not the hero/just a normal Hylian" challenge, as I'm willing to bet that your average Hylian isn't as fit as Link is… lol… 😛
All that is even better when paired with the Linkle Mod to literally be playing as "not the hero" (in other words, not Link. xD)

I just started a new playthrought while waiting for the sequel and I created some different rules ….the main is before doing the divine beasts I have to do alll shrine that doesn’t need having the divine beast and all korok seeds with only 3 hearts but I’m allowed to upgrade the stamina wheel and eating only apples
technically you could do them all at once, but there would be literally no way of doing damage for a lot of reasons, so it wouldn't be beatable. the only way i can think of to do damage too ganon is to somehow glitch wolf link in and have him kill ganon, but i dont think he can attack ganon and even if he could there is still phase 2 and dark beast

How about normal arrows only. Unless the game won't let you advance without special arrows, you're only allowed to use a bow and regular arrows.
Technically being a pacifist doesn’t apply to “hurting” things that aren’t alive, so the guardians would be alright.
