Dear, oh dear. What was it? The Money? The Lack of creativity? Or a piece of the market? Oh, it doesn't matter… It always comes down to the reviewer to help clean up after these sorts of messes.
Just played the demo that was released today on steam. The improvements you mentioned are in the demo. I was remaining at a280FPS at ultra high settings. Game is tough, but I am enjoying my playthrough. Did not encounter any game breaking bugs, everything was buttery smooth to me.
The combat system is not enough polish. It is too often disconnected and it is the whole purpose of the game, be precise.

Is there a reason you're pretending this game isn't a Sekiro clone by comparing it to the wrong game?
Looks awesome but I really hope they put more effort into the UI cuz it looks too mobile like. Of course the gameplay, atmosphere, animations and world is most important but the UI kinda is a reminder of the budget. Crappy UIs tend to distort how you look at a game even if just a little. If it looks cheap it will taint the overall view of the game l. Maybe it's just me but the UI in DS2 is what made me love DS2 way more because it gave a real classical old world charm to the feeling of the game. It's a very important detail in my opinion especially for me. Of course it's towards the bottom of the list as far as priority but I wouldn't count it out or make it a last thought. Yeah they need to work on that UI it's disgusting to me and a big turn off even though everything else looks stellar so far.

What makes all those FROM games so difficult is the lack of checkpoints. Not to mention when you die you lose everything, including what you used before you die.

The monster design seems a bit tame. But migh be due to the amazing designs for games like Nioh, soul games, with sich groteque looks

Game does look amazing but I can't understand why no "souls games" besides the originals from Fromsoft have multiplayer. The Surge 1 and 2, dont, Code vein, Lords of the Fallen, Mortal Shell… None have multiplayer.
It would literally be an actual miracle if any gaming company was capable of sticking with their original release date.

The game itself looks great but the UI feels like it's made by a developer rather than a UX designer. I think they need to take out some budget to revamp the UI as it shouldn't be underestimated how important that aspect is for the look and feel of a game.

The attacks seem too spammy with very little variation, and the enemies seem to be damage sponges. also from the video, it looked like you didnt have a way to get past enemy shields, and you don't have one yourself.
I always preferred the Souls games over bloodbourne, I'm a man who at least some of the time want the option to block.

In terms of gameplay mechanics (the skills and animations primarily) this oddly reminds me of CodeVein but using quicker combat similar to BloodBorne rather than DS. Looks more solid, but accounting for the slight tweaks that need to be made to the parry system still has its own "holes" in the overall experience. The fact that you mentioned DMC seems really interesting as BB and DMC combat sounds like a good fit. Even the weapons from those games sharing that "dark" look and shredding your enemies fits. Will definitely check this out once I go next gen

I've been following this one for a while. Some things have definitely gained some additional polish, but it's a little surprising that they still haven't touched up the UI. It genuinely looks like it's still stuck in prototype form. Just a LITTLE bit of polishing could really help out here. It's also a shame that many of the art assets and environments still clash pretty heavily with each other, like there is no consistency in the overall vision. but I also get that this is a very small team that's most likely very focused on making the combat work.
