You can clearly see her hitting you, but you don't take damage nor does it even interrupt your attacks. The parries also happen late, and only after she has already hit you.

This is crazy good, I just beat her yesterday on NG Give me God of War, but I wasn't so underleveled, I actually couldn't be stronger in that playthrough probably.
I'm surprised she never did the move where she rushes at you and then starts with the wings SWIPE attack.
Me always dodging back right always avoided the wing thrust attack and sometimes the spin attack. But I always got caught on the swipe. I wonder if they changed her a bit for PC?

im so frustrated, i fought her so many times, but some animations would get me killed even if i dodged them how i usually would, example, when she does the dropping ice attack i always step dodge sideways, cause the first few times i fought her step dodging backwards would always get me hit, but as her health gets to her last few bars, even the side dodge sometimes dosent work, but smvr back dodges no problem, he even dodges during certain attack animations, which i dont know how he does but whatever.
Also im playing with the best armour and stuff, but i do as much damage as he does, wth is going on, most of my important stats are almost maxed out.
At this point ive fought her like 30 times in NG+ but still cant beat her, im frustrated, i give up
