On the note of both Hearts and food: I've always went full-on for Heart Containers, because even the least potent Hearty food restores all your permanent hearts before adding temporary ones. So you can just create 5 Hearty meals out of 5 Hearty radishes/truffles/whatever and get a higher net benefit than if you'd used them to get one max-level meal for massive temporary hearts.
Same for temp stamina food – you can climb/swim/glide until you have but a sliver left, and instantly refill to full with one meal.
Two of the three parts of the climbing gear are easily accessible, increasing the speed and lowering the stamina use for climbing. Once you have all three parts at upgrade lvl 2, you unlock a skill that allows you to jump for half the stamina cost, making jumps about as draining as climbing, thus becoming a viable option to quickly scale cliffs.
Also note that the last jump before your stamina runs out – shown by the bar turning red – will have about double the normal distance, so if you're just out of reach of a safe ledge, you might just be able to jump it.
That said, most cliffsides are built with a single stamina wheel in mind, so look for outcroppings or cubby holes where you can rest and regain your stamina.
